2 c Watermelon – diced
1 c Cucumber – seeds removed, fine dice
2 tbsp Shallot – Brunoise
2 limes – segmented and then squeeze the remaining juice out of the pith
1 tbsp Tarragon chopped
2 tbsp Basil chiffonade
2 Tbsp Olive Oil
1 Tsp Kosher Salt
1 tsp Cracked Pepper
½ c Scallions – sliced
Combine all ingredients and fold lightly.
