Cynthia gives us insight to what is on the dinner table with the Beretta family on an average summer’s eve. Fava Bean Summer Salad, Grilled Corn on the Cob & a Chimichurri Sauce is on the menu today!
Chimichurri Sauce:
A Beretta family staple! Having made several trips to Peru over the years, this is a sauce that is served with almost everything. Beretta Hotdogs and Beretta Burgers never hit the table without me making this fresh. Using all the fresh herbs from the garden in the summer, it always turns out to be sensational.
1 bunch chopped Italian parsley
1 bunch chopped cilantro
3 Tbsp chopped oregano
2 tsp finely chopped garlic
1 finely chopped shallot
1 ½ tsp brown sugar
Freshly squeezed juice from 2 limes
Pinch of crushed red pepper
Pinch of salt and pepper
5 oz red wine vinegar
5 oz olive oil
Chop parsley, cilantro and oregano and blend them together. Put the herbs in a bowl and add garlic, shallot, sugar, lime juice, red pepper, salt, pepper, vinegar and olive oil. Whisk it all together and serve on your favourite Beretta hotdog!
Fava Bean Summer Salad
5 cups fresh fava beans
1 cup alfalfa sprouts
1 cup broccoli sprouts
1 cup feta cheese, crumbled
1/3 cup olive oil
3 Tbsp sherry vinegar
Honey to taste
1 Tbsp lemon zest
¼ cup fresh basil, chopped
¼ cup fresh tarragon, chopped
¼ cup fresh parsley, chopped
2 minced shallots
Sea salt and fresh pepper to taste
½ cup toasted walnuts
¼ cup finely chopped red pepper
Prepare fava beans, shell fresh and then remove outer skin. Blanch them for 30 seconds in boiling water. Set aside and let cool. Mix sprouts, cheese, fresh herbs, shallots, and red pepper. Combine oil, vinegar, honey, lemon zest, salt and pepper. Add fava beans to the fresh ingredients. Pour fresh dressing on top and mix together. Toss walnuts on top and season with more salt and pepper if needed.
Grilled Corn on the Cob:
8 Corn on the Cob
1 Cup melted Butter
Juice from one Lime
Sea salt and fresh pepper
Mix together butter, lime juice, salt and pepper. Brush mixture on the fresh corn on cob and wrap in foil. Grill, turning once for 15-20 minutes.
