Step aside brunch. While we love you and will forever hold you near and dear to our hearts (and bellies), Father’s Day calls for something a bit more ‘beefed up.’ We all know that grilling is the way to Dad’s heart, and we have a feeling you get bonus points if you do the grilling for him. That’s why we’d like to [reintroduce] our Steak with Chimchurri Sauce. We’ve spoken to this recipe before, and we’re more than likely to speak to it again after this, but that’s just because it’s THAT good. It’s Dad tested, Dad approved, and the rest of the family seems to enjoy it as well so grilling it up this father’s day is nothing but a win-win.
This recipe is simple to make. For the protein portion ANY cut of beef works well with chimichurri, but since Father’s Day is a special occasion we’d recommend grilling up a nice ribeye or tenderloin (from Beretta of course) ;). For the marinade, see below:
Combine ½ cup of red wine vinegar, 1 tsp salt, 3-4 minced garlic cloves, and 1 red jalapeno that has been finely chopped in a medium bowl and let stand for 10 minutes. Then stir in ½ cup minced fresh cilantro, ¼ cup minced fresh flat-leaf parsley and 2 tbsps on finely chopped fresh oregano. Using a fork, whisk in ¾ cup of extra virgin olive oil.
Remove ½ cup of your chimchurri, season with salt and pepper to taste and reserve this as your sauce for the ‘main event.’ The rest of the chimchurri can be tossed with your chosen proteins and left to sit for at least 3 hours or overnight! When you’re ready to grill, cook you steak as you normally would.
A special occasion dinner needs some special occasion sides. At the Beretta household there is no such thing as ‘too much’ meat on one person’s plate, so why not add some Beretta bacon to your greens (yes yes, we know that somewhat defeats the ‘healthy’ aspect of greens… but Father’s Day is a holiday!). Bacon wrapped green beans or bacon wrapped asparagus (which is currently in season)work very well for a ‘man approved’ menu accompaniment. Simply season your chosen veggie, bundle together in groups of 5-8 pieces and wrap with bacon. Cover in foil and bake for 35 min at 400 degrees, then for an additional 10 min uncovered to ‘crisp’ your little bacon wrapped bundles up.
For the salad lover in your life, the Beretta Kitchen’s take on the classic Caesar is always a crowd pleaser. Swap out romaine for shredded kale, sprinkle with cranberries, sunflower seeds and croutons, toss in your favourite Caesar dressing, and top with good old shredded parmesan cheese. Voilà!
As with many of our favourite recipes, these three ‘man approved’ menu items don’t need to be made together. The sides will easily pair with any protein! And if they don’t tickle you fancy we don’t think there’s anything that DOESN’T pair well with the Chimchurri steak. So customize away and put a smile on Dad’s face this Father’s Day.
